Making a Turkish coffee

Check out how he does it. He's just moving it in the sand but if you look at the coffee, it gets refilled when he moves it. It's like some kind of magic! I guess the sand is hot and there's coffee ground in the small pot he uses which gets filled with water when the heat rises up, like a very high evaporation.
